
There's something especially appealing about adapting the cozy "warm" flavors of oatmeal into a
frosty treat. Scrumptious!

1 | recipe | oatmeal cookies |
* Substitute a quart of best-quality, store bought rum raisin ice cream if preferred. |
- Prepare the rum raisin ice cream as directed and freeze it until solid. Alternately, purchase a quart of rum raisin ice cream.
- Prepare the oatmeal cookies as directed.
- Cool the cookies and select 12 good ones.
- Remove the ice cream from the freezer and scoop or cut a piece of ice cream to fit between the cookies. Sandwich the ice cream between the oatmeal cookies.
- Wrap the sandwiches individually in plastic wrap or foil and freeze for at least 2 hours.
