Oatmeal Rum Yum Raisin
Ice Cream Sandwiches

There's something especially appealing about adapting the cozy "warm" flavors of oatmeal into a
frosty treat. Scrumptious!

* Substitute a quart of best-quality, store bought rum raisin ice cream if preferred.
  1. Prepare the rum raisin ice cream as directed and freeze it until solid. Alternately, purchase a quart of rum raisin ice cream.
  2. Prepare the oatmeal cookies as directed.
  3. Cool the cookies and select 12 good ones.
  4. Remove the ice cream from the freezer and scoop or cut a piece of ice cream to fit between the cookies. Sandwich the ice cream between the oatmeal cookies.
  5. Wrap the sandwiches individually in plastic wrap or foil and freeze for at least 2 hours.
