Tomato-Basil Bruschetta

Peak season tomatoes don’t need much. Just add a whiff of garlic, a crunch of toast, a sprinkle of basil... and you’ve got perfection on a plate.

Ingredients
Serves 16–20 slices
Grilled Garlic Toasts    
1 loaf French bread, cut into 1/4" slices
10 tablespoons olive oil
5 cloves garlic
Tomato-Basil Topping    
5–6   medium tomatoes
to taste   salt and pepper
1 teaspoon sugar*
1 bunch Basil leaves
 *Add the sugar only if tomatoes are not 100% ripe and are in need of sweetening.
 
 
Directions 
 

Grilled Garlic Toasts

1. Cut the bread into ¼” slices and toast on both sides using a grill or broiler.

2. Brush the top of each slice with olive oil and rub with garlic.

Tomato-Basil Topping

1. Cut the tomatoes in half and discard the core and seeds. Chop the flesh and place it in a small bowl. Add salt, pepper, and sugar (if needed) to taste.

2. Roll 3–4 basil leaves tightly and slice thinly. Repeat the process until all Basil leaves are cut. Add to the tomatoes and let sit, un-refrigerated for 1 hour.

3. Pour off any liquid and correct the seasoning.

4. Spoon the tomato-basil mixture on top of the garlic toasts.

5. Arrange bruschetta on a platter, decorate it with the Basil leaves, and serve immediately.

 

 

Preparation time: 12-15 minutes.
