Mustard Shallot Citrus Dressing for Fish Carpaccio

This dressing is tart and intense, and is thus excellent on rich dishes such as shellfish or raw fish such as tuna. It is equally fine on starchy salads, such as those featuring white beans, and on radish or cucumber salads, which are assertive enough to stand up to it, it also works on simple leafy salads.

Ingredients
3 tablespoons Dijon mustard
1/4 cup fresh lemon juice
1/2 cup extra-virgin olive oil
3 tablespoons finely minced shallots
~   sea salt
~   freshly ground black pepper

 

 
 
Directions 
 
  1. Whisk together the mustard and lemon juice in a bowl, then whisk in the olive oil.

  2. Add the shallots, whisk again and season to taste with salt and pepper.
