Roasted Beets with Greens
Recipe
Most stores remove the greens from beets before stocking them, but the greens are often available on request. If you roast the beets ahead, this colorful side dish comes together in just a few minutes.

Ingredients
Serves 4
2+ tablespoons olive oil
2 cloves garlic, crushed
2 bunches beet greens, chopped
2 medium roasted beets, diced ½-inch (use both red and gold beets, if available)
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
 
 
Directions 
 
  1. Heat the olive oil in a skillet over medium heat and add the garlic. Adjust the heat and cook for approximately one minute, taking care not to let the garlic burn.
  2. Stir in the greens and beets and mix well. Add more olive oil if the pan seems dry. Cook until the greens are wilted.
  3. Add the salt and pepper; taste and adjust the seasonings as needed.
  4. Serve immediately.

 

 

Preparation time: Under 10 minutes with pre-roasted beets.
